Neil and Kathy Gardner of Kintelah Salers on the Mid North Coast of NSW have been supplying their local butcher, Mr Robert Trenchard of Wingham Plaza Butchert with Salers and Salers cross-bred cattle for a number of years. Mr Trenchard (better know as “Snow”) had kindly written a testimonial of his experience in using Salers cattle in the retail trade.
“I have worked in the retail butcher trade for 43 years and believe that Salers cattle, both purebred and cross bred would fill the bill for most customers in butcher shops around Australia. Customer’s today request lean tender meat with flavour. For the last few years we have been using Salers and Salers cross yearlings supplied by Neil and Kathy. These cattle are always presented in prime condition, generally less than 12 months of age with a dressed carcase weight of around 190-220kgs. Conformation is excellent, with musculing well developed and having large eye muscle area. Bone out percentages are better than traditional breeds by 3 to 5%. The mat retains the moisture and tenderness of milk vealers.
I have often remarked to Neil that I wish he could supply me with yearlings every week of the year, as I have never had a breed of cattle receive so many compliments regarding tenderness and eating quality. Praise must go to Neil and Kathy for their expertise, time and research in providing a consistent product.
Having tried many of the newer or less traditional breeds of cattle over the years I find Salers to be the BEST.”
